Peanut Butter Hummus

This peanut butter hummus recipe comes courtesy of a free downloadable cookbook from the US Dept. of Health and Human Services.  Nutrition information for this recipe is included in the cookbook along with an accompanying recipe for garlic pita chips.  Peanut butter hummus is a kid friendly, healthy snack that can be made in under ten minutes.  Don’t forget to check out our White Bean Hummus Recipe and  Roasted Chickpeas Recipe for more quick and healthy snack ideas.

Peanut Butter Hummus

2 cups garbanzo beans or chickpeas (approximately one 15.5 oz. can), rinsed
¼ cup creamy peanut butter (or substitute other nut or seed butter)
¼ cup lemon juice
2–3 tbsp garlic, minced
¼ cup low-sodium chicken broth
1 tbsp olive oil
¼ tsp cayenne pepper (or substitute paprika for less spice)

Combine all ingredients in a food processor or blender. Purée until smooth.  If you are not using a food processor or blender, mash the ingredients into a dip using a fork or potato masher.  Serve the peanut butter hummus with pitas or carrot and celery sticks.
