Peanut butter hummus is a kid friendly, healthy snack that can be made in under ten minutes. Peanut Butter Hummus
2 cups garbanzo beans or chickpeas (approximately one 15.5 oz. can), rinsed
¼ cup creamy peanut butter (or substitute other nut or seed butter)
¼ cup lemon juice
2–3 tbsp garlic, minced
¼ cup low-sodium chicken broth
1 tbsp olive oil
¼ tsp cayenne pepper (or substitute paprika for less spice)
Combine all ingredients in a food processor or blender. Purée until smooth. If you are not using a food processor or blender, mash the ingredients into a dip using a fork or potato masher. Serve the peanut butter hummus with pitas or carrot and celery sticks.
