This cheap and easy lentil soup recipe is called Faki in Greece.
Lentil Soup (Faki)
1 lb. lentils
1 tbsp tomato paste
¼ cup chopped fresh parsley
3 tbsp lemon juice
1 cup chopped onion
2 stalks celery, chopped
1 carrot, chopped
2 tsp garlic, minced
½ cup olive oil
2 quarts water
salt to taste
- Wash the lentils by running them under cold water in a colander. Drain.
- Heat the oil in a large pot over high heat. Sauté the onions, carrot, and celery until soft, about 3-4 minutes. Add the garlic, and sauté for another 30 seconds, stirring constantly.
- Add the lentils, tomato paste, parsley, bay leaf, and water. Bring to a boil, then cover and reduce the heat to a simmer. Cook for 45 minutes or until the lentils are tender.
- Before serving, add the lemon juice and salt to taste.
Variation: Add ½ tsp oregano and ½ cup chopped tomatoes to the soup just before serving.
Yield: 6 to 8 servings
