A quick and easy vegetarian dinner party side dish.
Green Beans with Garlic
2 lb fresh green beans, trimmed
4 cloves garlic, minced
2 tsp fresh tarragon, minced or ½ tsp dried tarragon
4 tbsp unsalted butter
¾ cup Parmesan cheese, shaved
- Fill a large bowl with ice water. Set aside.
- Fill a large pot with water and bring to a boil. Salt the boiling water, then add the fresh green beans. Cook the green beans until tender-crisp, about 4-5 minutes. Drain the green beans, then immediately transfer them to the ice water. Let the green beans cool for 1 minute. Drain the ice and pat the beans dry with a towel.
- In a large frying pan over medium heat, melt the butter. Add the garlic, cook, stirring constantly, for 2-3 minutes until pale gold. Add the cooked green beans and tarragon to the garlic butter. Gently toss the green beans to coat with garlic butter, then season to taste with salt and pepper. Cover partially, and cook, stirring occasionally, until the green beans are heated through, about 3-4 minutes. Serve hot topped with the Parmesan shavings.
