Here is a green bean curry recipe that is very quick and easy:
Green Bean Curry
½ lb. green beans, trimmed and sliced in half
1 small red onion, sliced finely into half-rings
2 tbsp plain yogurt
½ cup milk
1 tsp ground coriander
½ tsp cumin seeds
½ tsp chili powder
¼ tsp turmeric
2 tsp. ghee or canola oil
2 tbsp hot water
pinch of salt
- Heat the ghee or canola oil in a large pan over medium heat. Add the cumin seeds and fry lightly until they start popping.
- Add the milk, then gradually whisk in the yogurt. Add the chili powder and turmeric. Simmer for 5 minutes.
- Add the green beans, ground coriander, and the onions. Cover and simmer for 5 minutes, then add 2 tablespoons of hot water. Cover again and cook for another 5-10 minutes until the green beans and onions are just soft or to taste. Add the salt and serve.
