Green Bean Curry

Here is a green bean curry recipe that is very quick and easy:

Green Bean Curry

½ lb. green beans, trimmed and sliced in half
1 small red onion, sliced finely into half-rings
2 tbsp plain yogurt
½ cup milk
1 tsp ground coriander
½ tsp cumin seeds
½ tsp chili powder
¼ tsp turmeric
2 tsp. ghee or canola oil
2 tbsp hot water
pinch of salt

  1. Heat the ghee or canola oil in a large pan over medium heat.  Add the cumin seeds and fry lightly until they start popping.
  2. Add the milk, then gradually whisk in the yogurt.  Add the chili powder and turmeric.  Simmer for 5 minutes.
  3. Add the green beans, ground coriander, and the onions.  Cover and simmer for 5 minutes, then add 2 tablespoons of hot water.  Cover again and cook for another 5-10 minutes until the green beans and onions are just soft or to taste.  Add the salt and serve.
