10-minute Black Beans

This quick and easy bean recipe can eaten as a side dish, or can be turned into a quick dinner by wrapping the beans in a tortilla and serving as a bean burrito.  Add a dollop of sour cream or grated Monterey jack or cheddar cheese on top or in the burrito for extra flavor. Use canned black beans to save time.

10-minute Black Beans

3 cups cooked black beans (approximately 1½  15 oz. cans)

1  tbsp vegetable or canola oil

1  onion, finely chopped

1  green bell pepper, finely chopped

2  garlic cloves, finely chopped

1  tbsp ground cumin

1  cup salsa

salt


In a medium saucepan, heat the oil. Add the onion, bell pepper, garlic, and cumin, and sauté until the onion is tender, 3-5 minutes. Add the black beans and salsa, and cook until the black beans are hot.  Season with salt before serving.

Yield: 4-6 servings
